Makes 1 generous serving. 2 tablespoons of extra virgin Greek olive oil
1/2 onion, roughly diced
2 cloves of garlic, minced
2 Roma tomatoes, roughly diced
1/4 cup dry wine, preferably rose'
7 large shrimp, shelled, deveined,
leave tail on
salt, pepper, Greek oregano
4 large Kalamata olives
2 tablespoons crumbled feta
French bread
In skillet, heat olive oil, add onion
and garlic, saute until lightly browned, about 6 minutes.
Add tomato and wine, cook until most of the wine evaporates.
Add shrimp seasoned with salt, pepper and oregano, add olives. Cook and stir until shrimp are just cooked through. Top with feta. Serve with French bread.
